Blueberry mojito mocktail

This refreshing Blueberry Mojito Mocktail combines fresh mint, lime, and a homemade blueberry syrup for a delightful and inclusive drink perfect for any occasion. Bursting with vibrant flavors and easy to make, it’s a beautiful addition to your summer drink recipes

Ingredients
  

  • 1/2 cup fresh blueberries
  • 10-12 fresh mint leaves
  • 1 tablespoon sugar for syrup
  • 1/2 cup water for syrup
  • 1/2 lime cut into wedges
  • Ice cubes
  • 1/4 cup blueberry syrup recipe below
  • 1 cup soda water or sparkling water
  • Extra mint leaves and blueberries for garnish
  • Blueberry Syrup:
  • 1 cup fresh or frozen blueberries
  • 1/2 cup sugar/ or 3 tablespoons honey
  • 1/2 cup water

Instructions
 

  • Make the Blueberry Syrup:
  • In a small saucepan, combine 1 cup blueberries, 1/2 cup sugar, and 1/2 cup water.
  • Bring to a boil over medium heat, then reduce to a simmer.
  • Simmer for about 10 minutes, stirring occasionally, until the blueberries have broken down and the mixture has thickened.
  • Strain the syrup through a fine mesh sieve to remove the solids. Let the syrup cool.
  • In a tall glass or cocktail shaker, add the fresh mint leaves.
  • Use a muddler or the back of a spoon to gently mash the mint to release its flavor.
  • Squeeze the juice from the lime wedges into the glass. Drop the wedges in the glass after squeezing for extra flavor.
  • Fill the glass with ice cubes.
  • Pour 1/4 cup of the prepared blueberry syrup over the ice.
  • Top off the drink with soda water or sparkling water. Stir gently to combine.
  • Garnish with extra mint leaves and a few blueberries.
  • Serve immediately and enjoy your refreshing Blueberry Mojito Mocktail!
  • Feel free to adjust the sweetness by adding more or less blueberry syrup to your liking. Enjoy!

Please note that you need to allow the time for cooling the simple syrup.
