  • 1 small beet peeled and chopped (raw or roasted)
  • 1 cup mixed berries strawberries, raspberries, and blueberries, fresh or frozen
  • 1 ripe banana for natural sweetness
  • 1 cup almond milk or your favorite plant-based milk
  • 1 tablespoon chia seeds for added fiber and omega-3s
  • ½ teaspoon vanilla extract optional, for a hint of flavor
  • Ice cubes optional, for a thicker, frosty texture

Instructions
 

  • If using raw beets, make sure to chop them into small pieces for easier blending. If you prefer a milder beet flavor, roast them first for a sweeter, more subtle taste.
  • Place all ingredients in a high-speed blender: beet, mixed berries, banana, almond milk, chia seeds, and vanilla extract.
  • Blend on high until smooth and creamy. Add ice cubes if you want a thicker consistency.
  • Taste and adjust sweetness or thickness as needed. You can add a drizzle of honey or more almond milk to your liking.
  • Pour into a glass and garnish with fresh berries, a sprig of mint, and a sprinkle of chia seeds for a beautiful finish.
